Restaurants: Nic’s Beverly Hills Launches Summer Pool Party Series

Nic’s Beverly Hills, the hip bastion of all things vodka, has decided to spice things up by transforming their backyard parking lot into a luxury poolside outdoor lounge. No one seems to care that there is no pool – the vibe is definitely Beverly Hills poolside chic. They kicked off the new theme with a party that featured some inventively tasty vodka cocktails, bite size upscale munchies, a 60-foot tall video installation and party tunes presented by KCRW DJ Mario Cotto. The proceeds of the event went to the L.A. Regional Food Bank, so everyone involved had a blast and did a good deed.

Nic’s is a plush vodka haven on Canon Drive in the heart of Beverly Hills. They have comfortable booths and tables as well as the Vodbox, a 28˚ F vodka locker with modern décor, white leather shelves and abundant Lucite. Their selection of fine vodkas is unsurpassed and the poolside launch party featured original cocktails from Grey Goose Vodka, Kanon Organic Vodka, Beluga Vodka and Chopin Vodka. A few of the cocktail creations really stood out. The Grey Goose Cherry Noir with sour mix and a hint of serrano chile was delicious. The KokoKanon was a trip to the tropics that mixed the organic vodka with freshly blended pineapple, coconut milk, coconut water and foam served in a coconut shell. Another standout was the Acapoolside with Beluga Vodka, fresh pressed Watermelon, Red Bell Pepper, a hint of Serrano and a Prosecco floater.

While party guests relaxed on luxurious couches, chaise lounges and comfy chairs around the perimeter of the transformed parking lot, servers offered a variety of finger foods fresh out of the kitchen. The Ahi tuna in butter lettuce with pickled ginger and radish slaw was light and delicious. The sliders with an herbal sauce were juicy and tender. A smoking hot flatbread pizza had a tasty crust and tangy flavors. The vodka cured salmon on pumpernickel raisin crostini with a caper dill aioli was a perfect complement to shots of the premium, smooth vodkas.

As the night cooled and the vodkas did their magic, many guests stayed warm by dancing to the pulsating music selections of DJ Cotto. Nic’s has come up with a successful concept that blends the best of Hollywood nightclubs, Beverly Hills hotel pool parties and an upscale bar/restaurant atmosphere.
